  • 4 ripe bananas
  • 1 cup of brown sugar (225g)
  • 2 large eggs
  • 125g of melted Stork tub
  • 5ml of vanilla essence or 1/2 a vanilla bean
  • 1 cup of flour (115g)
  • 1/2 cup of oats (50g)
  • 1/2 cup of desiccated coconut (40g)
  • 5ml bicarbonate of soda
  • 5ml baking powder
  • 5ml of cinnamon

  1. Mash the bananas and the sugar together. Put it in a medium bowl and add the eggs, melted Stork tub and vanilla
  2. In a large bowl, sift the flour, bicarbonate of soda, baking powder and cinnamon together. Add coconut and oats
  3. Add the first banana mixture to the dry ingredients and mix completely
  4. Spoon mixture into muffin pans with muffin liners
  5. Bake for between 15 and 18 minutes until golden brown
